test(expo): boot each iOS lane without its background services on CI - #10418
This makes the Expo iOS device tests boot their simulator lane with simslim. The lane comes up without the background services a test run doesn't need, which matches clerk/clerk-ios#763.
A local iOS lane runs simslim on <udid> right after it's cloned from the template, in place of simctl boot and simctl bootstatus. simslim writes its disable overrides while the clone is still shut down and then boots it once. If simslim fails, or VERIFY_SIMSLIM=1 is set and simslim isn't installed, the lane fails with NOT_READY. integration/expo-native/src/platform/ios/local.ts was identical to the clerk-ios copy, and it still is.
The lane has to be slimmed rather than the template, because a clone doesn't inherit the overrides. A check run in clerk-ios showed the template with 168/168 services off and its clone with 0/168.
The iOS job downloads the simslim v0.12.2 release binary, checks its SHA-256 and sets VERIFY_SIMSLIM=1 on up. Android doesn't change.
A lane on a developer's Mac is slimmed too whenever simslim is on PATH, and VERIFY_SIMSLIM=0 turns that off. doctor warns when simslim isn't installed, and without it a lane boots stock as before.
None of the specs needs a service simslim turns off. The token cache's keychain, LocalAuthentication (biometric availability) and the AuthenticationServices prompt (Google sign-in) aren't on simslim's list.
How it was tested: workflow_dispatch run 40203944342 on this branch. Device tests (ios) passed all 17 tests with no retries, and Device tests (android) passed too. That run had to build the native app from scratch because no build was kept for the new branch, so its up step (220 s) isn't comparable to a recent run that reused one (67 s). The test step took 323 s against 343 s in 40131224652. In clerk-ios, where every run builds the same way, the end-to-end job went from 2206 s to 1406 s.
pnpm test and pnpm build aren't affected. The e2e package's own tests pass (182).

The first boot of a lane's simulator keeps the runner's cores busy.
With VERIFY_SIMSLIM=1, a lane writes simslim's overrides before that
boot, so the services never start. The iOS device tests opt in.

Walkthrough
The iOS backend now selects slim or stock simulator startup based on VERIFY_SIMSLIM and simslim availability. Doctor checks report simslim installation and mode. The E2E workflow installs a pinned simslim binary, verifies its checksum, and configures it for iOS fixture builds with boot and spawn timeouts. Tests cover mode selection, and setup instructions document installation and the stock-mode override. A changeset file contains empty YAML front matter.
clerk/javascript#10380: Selects the macOS runner used by the iOS device-test job, which is relevant to running the arm64 simslim binary added here.

A lane now boots with simslim whenever simslim is on PATH, on a Mac as
well as on CI. VERIFY_SIMSLIM=0 boots stock, and VERIFY_SIMSLIM=1 still
fails when simslim is missing. doctor reports whether simslim is
installed, as a warning, and the skill's setup says how to install it.
