fix(h4): Jackson 3 polish (webhook asString 500, mapper guidance, guard asserts) - #178

- IncomingWebhookService: no-arg JsonNode.asString() throws on object/array
nodes under Jackson 3, so a correctly signed but unusual payload gave 500.
All call sites use asString(""); regression test with null/object/array
fields (was 500, now 200)
- StringListConverter: JsonMapper.builderWithJackson2Defaults() to match
the app-wide use-jackson2-defaults
- ai-guide: inject Spring's mapper / builderWithJackson2Defaults, warn
about asString() on untrusted JSON
- JsonWireFormatGuardIntegrationTest: pin enum name() read/write and ISO
durations

The app talks to it over the Docker network, so bind to 127.0.0.1 (host tools still work).
